Berry Sweet Baby Shower Cake

This cake design is my new favorite! I had a blast making the strawberries and the little baby on top.

My little sister is having a baby and I felt blessed to be a part of her baby shower and to have a hand in the decorating and event planning. Overall it went off well and things seemed to run relatively smoothly, but I'm sure if you asked around someone could find something to fix. Isn't that always the way? Things can always be better! :)

The cake was vanilla with vanilla buttercream in the top tier. The bottom tier was chocolate with Mint Oreo buttercream filling (my sister craves Mint Oreos). The top tier transported nicely, but the bottom tier got a few cracks in the buttercream that bothered my inner perfectionist. I accidentally bought the wrong size box for the bottom tier and used straws (big mistake) to insert in the bottom of the cake and keep it from sliding inside the box. It "sort of " worked. However one of the straws pushed into the cake, left a small hole and cracked my icing. ACK.

I have been spoiled by my all-shortening/dairy-free icing and the cracks are a result of the butter crusting and the cake being transported over 2 hours in a mini-van not designed for this sort of thing! So what does every smart cake decorator do in the face of certain doom? Covers her cracks and faults with pretty decorations! And that's what I did. I used the bow placement to hide the biggest crack where the straw pushed into the cake. I added flowers to the bottom tier to cover some other imperfections and I rethought my design slightly to make it work. All the decorations are made from fondant and the borders are piped in buttercream. I made my fondant bows ahead of time so they could dry enough to be man handled as I polka-dotted them the morning of the shower. The piped ruffle with buttercream "ric-rac" looked really polished (I was surprised it worked so well). I put a lot of time and thought into this cake for my sister and I think that paid off. I would say I've improved my piping skills since the last cake and I will call that a huge win! Overall the design was not exactly as I originally planned but the end result honored my intent and (I hope) honored my sister and my new baby niece on the way. Happy Caking!

Frozen Cake

Did I mention I'm not a photographer? I know all bloggers *should* be photographers...but I really stink at it! I took these with my phone (I know...stop yelling), but they are what I have! So here you go:
 I actually wanted to make Olaf too, but ran out of fondant. The characters are sculpted from fondant with supports (straws/toothpicks, a rice cake under Anna). It was time consuming, but rewarding. The sculpting is actually my favorite part! I made this for my daughter's friend who has a dairy allergy. Her mom graciously allowed me to make it my usual way so my daughter could feel normal at a birthday party (which usually she always has to have her own separate cupcake I bring for her).


 And YES This picture is crooked. HA! I told you. I made a bunch of icing but still didn't have enough blue so I improvised with swirly snow-esque white to ice the side of the bottom tier. When I asked my friend how much cake she said "the bigger the better" so I opted for the two tiers since the bottom single layer looked so  tiny to me. I piped buttercream around Elsa and added sparkling white sugar sprinkles to make it look like snow. I piped as many snowflakes as I could near Elsa until I ran out of buttercream. One of the great difficulties about being a home baker is not having a stock of buttercream and cake to pull out!!!! I had to make due since it was late and all the stores were closed or soon to close. All in all it came out well. I do think Elsa was a little too curvy...shhhhh. Luckily most 7-8 year olds aren't focused on bust size and probably didn't care. It bothered me but I didn't have enough fondant to redo her! Cest La Vie!
 The paper towel kept her right arm from falling while she was drying. No styrofoam? Just use rice cake. We always have rice cake! I hand painted the face and pieced fondant together to make her hair and braid.
Anna turned out more like I wanted and the details were extensive and with a rewarding result! I had some trouble painting her eyes, but still it turned out better than I expected. She's also all fondant with a support and I have a rice cake under her skirt to keep it billowing out and not sinking down. I did add some paper towels under it while it was drying to help it have a nice shape. Those were (of course) removed before I placed her on the cake.

My daughter had so much fun at the party. Allergies are challenging her emotionally these days and although I didn't do the best job in preparing for everything at the party (pizza/pretzels...etc) she was able to have the cake and that meant so much to her. I know that she is actually the reason I started making cakes and she is the reason I've learned to make them allergen-free. I credit all my growth and efforts to her very existence. I thank God for her and her sacrifices. I know they've made me a better woman. Ever the work-in-progress!

Pirates Icing Smiles Cake

I was finally able to volunteer for another Icing Smiles Cake. This one was close to my heart.  I have a neighbor who recently lost their son to cancer. Also cancer has touched my family often over the years. Although it might seem unconnected...it really made me want to create this cake for Drew and his sister Grace. I actually wanted to make a cake for my neighbor's son Colty, but he was diagnosed so close to his birthday and I had just suffered a loss myself and was unable to accomplish much of my every day commitments. I really regretted that and although I know it wasn't my fault, doing this cake was a bit of a way to honor his life. I was blessed to meet Drew and his sister and their WHOLE family. So it was extra special. They requested a Neverland Pirates theme focused on Jake and Izzy. I did a vanilla cake with vanilla buttercream. All decorations are fondant excepting the sail/lookout box seen in the below pictures. The mast is a wooden skewer threaded through the sail to hold it up.

 I found a trick online to make the map look faded by dusting it with cocoa powder. I imprinted the letters and then painted them with brown icing color mixed in vanilla. The sand is made from brown sugar (so easy and so lovely)! I used Krispy treat for the treasure chest and edible pearls for some of the treasure.

Aren't they adorable!!!! I love that they dressed up for the birthday party!



Drew is in now in maintenance with his Leukemia! Please pray for this family as maintenance still means lots of testing and ups and downs. They have such a strong faith in the Lord! I am so grateful I was able to make this cake for them and was able to pray for them as I did it.

Pray for children who suffer with pediatric cancer. Stand up for them and pray for a cure. These cakes I make for Icing Smiles shine bright in my heart as my favorites. I am more blessed from making them than from any other cake I've made.

Toad and Racing Car 8 Cake

My husband is a huge gamer. You wouldn't really know it unless you know him super well. He has been excited about Mario Kart 8 coming out for a long time! So when his birthday came around the kids and I decided to do a Toad Racing cake with all the items we could make from the old and new games. I confess (quite to your surprise I'm sure) that I didn't make everything on this cake. I actually let go of my design enough to let the kids make stuff! :)


 Everything is fondant and buttercream with the exception of the flags which are gumpaste. This was a gluten-free, dairy-free, egg-free strawberry lemonade cake from a doctored Betty Crocker mix recipe I found. I then changed it a little more to make it strawberry lemonade. It had fresh strawberries in it which really added to the moistness of the cake and allowed it stay moist longer than the first day! This was a huge win for us (most cakes dry out fast when made allergen-free)!!!

The kids made most of the items. I made the stars, banana, bob-omb, and the sign. I piped the grass along the raceway with buttercream. I made Toad last minute as my first attempt failed and was too purple. Toad is not purple! But it still worked. Because he didn't have time to dry he was leaning back too much, but when I make cakes that are staying at home it isn't an issue.

The cake was not flawless, but it was precious since the kids helped so much. I think it meant more to them when daddy ate it and when they got to eat the items they helped create. I hope they remember all our baking endeavors with smiles.

First Holy Communion: Pink and White

I really still am in shock that this all happened, that my dear sweet child has made her First Holy Communion and I made a cake for it. It feels surreal!!! My baby is not a baby and she now can receive Our Lord in this amazing Sacrament! I feel more than I can possibly express.

 And yes that is a cake pan under the cake!!! I changed the size of the cake last minute and didn't have a board big enough for it so I flipped the pan. Sometimes you have to be flexible!
 I used gumpaste for the chalice and paten and fondant for the hosts so the kids could eat them. I put some red fruit snacks in the chalice. My kids thought that was the best...eating the hosts and getting fruit snacks out of the chalice. Nevermind about the humongous cake I baked and decorated...HA! The top cake is strawberry-lemonade (Gluten-free/dairy-free/ egg-free and safe for my allergic-to-everything child) and the bottom cake is safe Chocolate all with dairy-free vanilla butter cream icing.
The two little cakes are vanilla with marshmallow fondant I made from scratch. I used one of my cupcake toppers I had left to decorate one and a gumpaste plaque I piped onto for the other.

The biggest hit in my mind was the strawberry-lemonade. I found a gluten-free cake doctor recipe that I adapted to be safe and added lemon to to make the lemonade aspect of it. The fresh strawberries, increase in oil amounts and the jello packets seemed to keep it moist. The other cakes always dry out so quickly, but this cake was soft well into the week. My husband said it is now his favorite and requested it for his birthday! Win!

I am so proud of my beautiful daughter! Congratulations to her on her First Holy Communion!! I pray God guides her to the saint He desires her to be.

"There is but one suffering...to not be a saint."  Our bishop quoted this in his Pentecost Homily, but I can't remember who said it. I love it!

Alleluia Cake!

Easter this year was crazy busy! I am helping with the children's class for RCIA and that means Holy Week is I-have-something-every-night week. That said on Holy Saturday I managed to pull this off and take it for the Easter Basket Blessings at my parish.

This was a combined effort as my daughter made a little chickie and a bunny for it as well as Easter Eggs for the border. My son made one of the big flowers on the egg and I did the rest. They love making things out of fondant and I hope one day they savor these baking memories as blessed times in our life.

Although our 50 days of Easter Celebration have ended I pray you carry the Alleluias in your heart. We are the Alleluia people!

Bake Sale Cakes 2014

Here are some pics of the bake sale items I submitted this year for our church festival.
All my cakes sold including an Olaf cake I forgot to take a pic of...oh well! I have been using my phone camera to take pictures so forgive all the poor quality pics. They are the only kind I have lately! #poor excuse for a blogger

 These were cupcake toppers that did NOT sell...sigh. Too specific and not really reasonable. I saved them and used them for our own religious celebrations here.
 This is the white chocolate cake with vanilla butter cream. Not my best design! lol. Still fun and bright for a birthday cake or a just because cake.
 This is chocolate chocolate with a vanilla butter cream filling. I liked the simplicity of it.
These were some chocolate cupcakes I decorated in Festival colors that our parish uses to advertise. I incorporated virtues on them to appeal to my fellow Catholics. I made some allergen free cookies and some chocolate caramel cupcakes too but didn't get a good pic of them so just imagine the sweet image in your fabulous mind. ;)

Clue Crew Cake

My daughter's request for her birthday this year was for a Nancy Drew and the Clue Crew Cake. Huh? I was thinking it would be impossible!!!! However I drew up a sketch to try and mimic the cover style of her favorite book at the time and it turned out better than expected!

She liked the one about strawberry scented perfume and the beauty shop (it's the age!!!) so I incorporated some pink cosmetic/perfume bottles and did her age in the magnifying glass. I put a fondant image of her as part of the clue crew and dressed to match the cake with a "birthday sash" on as she was planning to wear one this year.

 As you can see from the clock I was up all night working to finish this cake!!! My hubby was out of town and I can't sleep when he's gone so it was a good excuse to just finish. I do think if I hadn't been exhausted I might have added some more detail to the bottles and possibly a border around the top tier. Exhaustion won the battle!
All in all it turned out the way she wanted and really who can complain about that! The cake was gluten free, dairy free, nut free, etc. It was chocolate on the bottom and vanilla on the top with dairy free vanilla butter cream and fondant decorations.

Pearls and Ribbon Anniversary Cake

This cake is from a while back, but I never posted it. My dear friend celebrated her 10th Wedding Anniversary and wanted a pure white cake to make up for her wedding day cake being not quite what she wanted. This cake was gluten-free and nut-free with vanilla cake and fondant decorations. I hand rolled the pearls and then painted them with pearl dust to give them shimmer. The topper is floral (not evident from this picture) with some pearls added to it. I used a ball of fondant and then attached the flowers and pearls to it to add dimension and interest. The ribbons is not edible but everything else was edible.

I'm back to posting now, so hopefully I can post a little more than once in a year!  I have some cakes I have yet to post so I will try and catch up when I can over the summer.

First Communion Cake


I made this cake for my dear friend's daughter on her First Holy Communion. It was about a year ago, but I'm just getting my act together. Looking at it now the gumpaste chalice really is not as well done as I would have liked. It was my first go at trying to make one and I think next time I will get a mold instead of free handing it. The grapes and wheat were very successful and I did enjoy learning to make the drape. This was my first draping attempt.

The cake was gluten-free vanilla and chocolate with vanilla buttercream. The accents are all gumpaste/fondant/buttecream. The little hosts were so easy to make. I really enjoyed making this cake for all the trouble it gave me...honestly I'm so used to using dairy-free buttercream I think the texture and the crusting always trips me up when I work with icing that has butter. Sculpting fondant is my passion when it comes to cake decorating. I enjoy it all, but the part I love really is the sculpting.

I consider this one a good design that I may use for my own daughter's First Holy Communion cake. Hopefully if I do another Chalice I can have a little more success next time.

Sacred Heart Cake

 "I need nothing but God, and to lose myself in the heart of Jesus."

Yesterday was the Feast of the Sacred Heart of Jesus. This devotion became popular following the Lord's revelations to St. Margaret Mary Alacoque. More information can be found at American Catholic.org...see link here:

I have a very special devotion to Our Lord through this image of His Loving Heart. We did the Sacred Heart Enthronement just before our daughter was born and this Feast is extremely important to our family.

The kids made some toppers for cupcakes to share and I made this 6 inch cake for our family. It is small, but filled with love for Our Lord! :)

The cake is gluten-free vanilla with dairy-free buttercream and fondant accents. If I'd had more time and more red fondant I would have covered it completely, but time was short and I was making dinner at the same time so I left it as it is above. I painted the wooden pieces with food color mixed with vanilla extract and dyed a little red fondant burgundy to do the blood from the wound made by the soldier's lance. My son was very adamant that we not leave any detail off of the cake.

Easter Cake and Divine Mercy Cake

Here are two cakes I made during the Octave...

  I threw this together at the last minute...which is obvious!!! :) I had promised my kids a cake for Easter Sunday but was soooo very busy with many things to get ready for the kids in our program entering the Church on Easter Saturday Vigil. I was also making Sacrament Cake Topper pieces (which I forgot to photograph...go figure). I did manage to get this little cake iced and decorated. It is not really a great design: but the kids do not care about such things the way that I do!


Divine Mercy Sunday occurs the 2nd Sunday of Easter (the readings for that weekend are very much about Mercy already and go so well with this theme) and since Sundays are my baking days during Easter after giving up baking for most of Lent, I decided to make a small cake again to celebrate. I really wanted Easter to be very different from Lent and the "feasting" aspect of this for us is usually tied to cakes/cookies and the like since Momma's a baker! Divine Mercy is a beautiful devotion started through a favorite saint of mine Saint Faustina. She was a Polish nun who Christ gave a mission to that she should proclaim His love and mercy to sinners that He comes to us first with love and mercy before the day of judgement. There is a lovely prayer that accompanies it called the Divine Mercy Chaplet. I took my daughter to our Parish's afternoon prayer service for Mercy Sunday and then we prayed the short prayer at home before having cake. This design is so simple but very strong in impact. The kids enjoyed deciding which "color" to eat and it emphasizes the teaching of Divine Mercy without too much hassle. I really just spread the frosting on and scraped across it to make the red/blue rays. Here's a link to more info on the Divine Mercy devotion:

Monster Truck Cake

Making this cake was a gift to me. I think that whenever the Lord gives us an opportunity to serve others He gives us tenfold from that service. I really enjoyed making this cake and praying for the family as I worked. Work with prayer is twice as sweet. I made this cake for Evan and his family. Evan has many challenges being an older sibling to a handsome little brother with many medical needs. As a new volunteer with Icing Smiles I was honored to make a cake for Evan. I didn't get to attend the party but I was really blessed to meet them and become a part of the community support network in our area.                                                                                                                                                                                                                                                                                                                                     Evan's Cake was Monster Truck themed and based on his favorite truck. I made this cake Gluten-Free with Gluten-Free Krispy treats to make the truck and wheels. I have never had so much fun playing with crumbs of cake and frosting!!! Making mud mountain was a challenge that took time (a deliberate mess always does) and ended up being quite enjoyable. :)






                                              This all was very emotional for me and I really enjoyed the process and the joy in Evan's response to seeing the cake. I always wondered if I couldn't sell my cakes what I could do with this love for baking and I think this experience has shown me that God has a plan for our gifts and finds the right time for them to be given to others. 

This week's Office of Readings had the following scripture from Peter that really came at the right time and touched my heart: 

 "As each one has received a gift, use it to serve one another as good stewards of God’s varied grace. Whoever preaches, let it be with the words of God; whoever serves, let it be with the strength that God supplies, so that in all things God may be glorified through Jesus Christ..."

Rainbow Pony Cake

   Here is the latest baking fun from my home!
I had a very specific request from my daughter to make a Pony Cake based on her favorite toy and that it should be inscribed in exactly the way she directed. Hmmm...I think she gets this from me!

  So I made a very small cake (it was Palm Sunday when we had cake) as we were starting to the holy week fasting/prayer. However telling a girl she can't have a cake for her birthday was not really an option for us. I enjoyed making the very anime-esque eyes and thought it looked as close to her toy's match as it could in the time I allotted time to work on the cake.




 This was a new recipe I found for homemade chocolate allergen free cake that used vinegar and no eggs. I was somewhat happy with the  taste, but I think that it called for not quite the right amount of sugar. Next time I will up the amount. My hubby saw me making all the swirls and was somewhat confused. I did use them, but I made way too many!  I love this design. I think it could have more color (white clouds/white cake sort of bothers me) and if I had thought it through a little more and had the time I might have made the cake blue but I was thinking it would conflict with the blue on the pony. I covered a bunch of mini marshmallows with fondant to make the large cloud and then piped the smaller clouds from buttercream.

She loved her cake and even though it was a quick and short celebration (the cake didn't last more than a day since it was small) she was happy and that made me happy with it. :) :)

May the 5th be With You.



My son is majorly involved in his own little Star Wars world. Sets up entire fleets on his bedroom floor and dumps out all his toys to use each toy bucket as a separate planet. Very cute, very messy, but definitely a new obsession!

Of course for months now he has been going on about his birthday cake and what-who he wants on it. This was a challenge, but I think if I had started earlier the modeling might have been better. It is all still a learning process. I made Vader and he was a midget! I had to throw out the head and make the krispy treat body taller. No one wants a shrunken bad guy on their cake. I am beginning to think the key to good modeling is weeks of working and plenty of patience. ME I tend to do this 3 days before the birthday event...hehe. That doesn't make for much room to make mistakes. ALSO pieces that are soft are more likely to sink in or squish. Soooo we will try not to procrastinate when my daughter's birthday comes around. the light sabers had to dry but then to stick them into the hands they needed a toothpick which would then crack them. Spaghetti would have been smarter...just saying.

Okay as much as I'm going on about what went wrong I really am happy with it. He LOVES it and the death star wasn't the disaster I thought it might be, it actually does look somewhat like the death star. So I'm just nit-picking because that's how I learn and improve. The size of the cake would have worked better bigger, but the egg free/dairy-free/gluten-free cakes don't cook up well in larger sizes. I find the top burns and the middle is uncooked, so this 10 inch is actually quite large for me in terms of allergen-free cake making. I also remembered just how much better the VIVA towel works for smoothing buttercream. I cannot let myself think that anything else is comparable, because for me, it really is not better. Go VIVA! :)

Mr. Shark!

 

This is a long overdue post!

 I made this cake for my hubby's birthday over the summer. It was kind of a disaster scenario that turned out okay in the end. I did something I NEVER do which is tried to use a canned icing to speed it up and get the "Cotton Candy" flavor. I was very unhappy. I really don't like canned icing at all and the flavor was not ideal. So I just ended up with a much smaller cake after a HUGE FAIL on the first attempt.

I made this at my kids request that daddy's cake have the Shark puppet they love on it. Daddy is often voicing Mr. Shark and has Mr. Shark talk to them and play around. The kids ADORE this puppet. I used fondant to make him and just left him hollow so he'd sink like the puppet does. It really wasn't as complicated as I expected it to be, but the teeth were difficult. Shaping each one by hand and then adhering it with teeny bits of water was a delicate process! I hand painted the dot detail with icing color using a toothpick.

It was simple and had fish on it (Mr. Shark likes to eat fish). There really was not much to go on as a theme so I made this small cake for him. I know he liked it (although after my fiasco it was a day late) and I'm grateful to have him in my life. He is an amazing man.

I guess I should make time to catch up some of the other cakes I made. Life has been a whirlwind since my hubby started his new position in his office and I often feel like everything is moving faster, nothing is done and I'm in a state of chaos juggling everything without any breaks to breathe...but---that said, I wouldn't change it and I know it is all to the Glory of God and His perfect plan. So please forgive my lapse in blogging. I do miss sharing in the cake blogosphere...time to find a little space to explore it here and there again.

Cinco de Mayo Cake and Bake Sale

These are the cakes I made for the bake sale at our church. I always feel like Wonder Woman and in my mind I think I will make 4 or 5 little cakes. And then I end up frazzled and trying to just be happy with the two I managed to make in my available time. It is a good reminder that I am NOT Wonder Woman and a much needed humbling for my heart and soul.

So I made this cute little chili pepper cake...

which I struggled to not cut into myself...I really liked it and wanted to keep it, but I knew it was for a good cause so I had to love it and leave it.

Then I made this more traditional buttercream cake with some fun ribbon roses on top. I actually thought it had a bit of Cinco de Mayo flavor in a subtle way...the bottom ruffle almost looks like a traditional skirt and the rosettes have a sort of Mexican feel (like those lovely flowers used in decorations).

My Fave Egg-Free Cupcakes


I really love this recipe.

It's so nice to not have to measure out egg replacer and I love egg replacer, but it is SO pricey. This recipe doesn't use it and still gets a great texture, flavor and rise. Which makes me smile :) I adapted this recipe from a vegan version I found online.

I made this for the kids today and they are excited to have a Tea Party to celebrate...well the 4th Week of Easter and "almost done" with homeschooling week. Well, maybe mommy's just glad to be ALMOST done.

Here's the recipe:

Chocolate Allergen-Free Cupcakes:

1 cup of soymilk (or other dairy-free milk)
3/4 cup sugar
1/3 cup oil (I use Canola but you can sub any other oil you prefer---flax oil works for healthier option)
1 1/2 tsp cider vinegar
1 tsp vanilla
1/2 cup rice flour (I prefer white, but brown works too)
1/2 cup cornstarch
1 tsp Xanthum gum or guar gum
1/3 cup of cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

Preheat oven to 350 degrees Fahrenheit. Works best for 24 mini cupcakes or you can do 12 regular cupcakes. I haven't tried a cake yet. I'm a fan of the mini cupcakes for these.

Whisk wet ingredients together. Mix dry ingredients with a fork until combined. Pour into prepared pans (Greased or filled with cupcake wrappers).  Bake until a toothpick comes out clean around 15-20 minutes depending on your oven and the size of the cupcakes.

Let cool and frost with icing of your choice. I like Wilton's Dairy-Free version of their buttercream, but pick the icing that you like best! :)

Happy Easter Cake

Happy Easter...Season.

We celebrate Easter Sunday for 8 days (the octave) and then the Easter Season for 50 days. Sooo it's still Easter time for us. I know this a bit late for most of you, but you will have to indulge me as I've been out of town and only just got back to post pics.

This is an allergen-free chocolate cake with  dairy-free butter cream and fondant decorations. It's a tiny thing only a single layer and 6 inches. The lamb is molded in fondant and then I piped the furry part on and painted the eyes. The kids made the eggs and flowers (such great little assistants) and I did the rest. I had it blessed at the Blessing of the Food Liturgy at our church. I really enjoyed making baskets and taking them to be blessed...next year I need to remember to take a pic of the baskets...I forgot to do that this year!

Let Down Your Hair...

My sweet 6-year-old requested a "Tangled" Cake for her birthday and I was a bit overwhelmed. Honestly this cake was supposed to have Flynn on it and be much more "accurate" in appearance to the actual Disney movie...but I was not really up for that much work. THEREFORE...this is my interpretation of Rapunzel/Tangled.

The cake is an 8 inch, 3-layer cake. Allergen-Free AKA DF/GF/Nut Free amongst other things and has a dairy-free butter cream and a dairy-free chocolate butter cream filling. The decorations are all fondant, butter cream and DF krispy treat. The only inedible items are supports for the tower and Rapunzel.

The kids cut out most of the flowers and my birthday girl helped pipe flower centers. My own assistant cake decorators! :) I shaped the hair into a "6"...see above for the closeup shot...and used some of the Lustre Dust to make the hair and the Lily sparkly...sort of...I'm not sure how obvious it is!

To make the tower I used hidden pillars taped together and stuck a 12 inch support inside of them. I covered it in foil and butter creamed the sides before applying fondant and adding detail.  The house part of the tower is all krispy treat hand shaped and then covered in fondant. I cut out a piece for Rapunzel.

PHEW. Lots of work...but her smile made it worth it! :)
